Here's the company's website. I didn't read the NYT article, but my first thought based on your post was "mushrooms are a fungus" - and that's kind of what this is, from the same family anyway.

Mushrooms and penicilin. But, so is the stuff that grows in dirty bathrooms and musty basements, and so is Athlete's Foot, and I don't want to eat any of that.

Makes you wonder how they found a new fungus.

The article in the NYTimes talked about how they found the Quorn Fungus growing around the base of wheat stalks in the field-something about pink fuzzy mold more or less. Now they grow it in huge vats.

Wasn't it some sort of weird fungus/mold on the rye that caused the halutionations that lead to the Salem Witch Trials?

I'm still not eating that stuff
