Fresh Corn on the Cob

Ummmmmm.....is there anything better than freshly picked sweet corn this time of year? Luckily, all my neighbors grow "too much" so I get plenty for nuthin'.

So how do you prepare yours? I"ve never mastered the roasting method, so I just boil (in plain water, never salt water, it toughens the kernel ) and eat with some butter and garlic pepper.

And did you know that if you pick it, keep it in the husk and put it in the bottom of your fridge that it will keep for a week?!

Peel the husks back, remove the silk, wrap the husks back around the cob, soak in water, wrap in wax paper and microwave. It's wonderful, it's easy, and it's better than boiling.

Pull the husks off, rub with butter, wrap in plastic wrap and nuke.

For large quanties, I take the easy way out and boil them. For more moderate quantities, I shuck them, peel off the silk, wrap in waxed paper and microwave. I may try Deb's method next time, though.

I get a little water boiling in the bottom of a big pot and I stand them up, leaning, in the pot. Covered. This steams them, which is better than boiling.

Nuking them works well, too.

Well, OK, the only time I cut it off the cob was when my son was little.

Sweet corn. Mmmmmm.

I forgot to check this year whether it was knee-high by the Fourth of July. Is it a good corn crop year?

Around here it's knee-high by early June!

I love the microwave in the husk version. I'll have to try that, uhm, Friday.

Is there an easy way to get all the silks off? I try to just pull them out, invariably miss a few, and get them stuck in my teeth. That's the only thing I hate about corn on the cob.

Sometimes we boil the corn, and then finish it off on the grill. We butter it and wrap it in foil - then toss them on the grill for a faster roasted taste.

My roommate in college was from Southern PA, down near the Mason/Dixon Line. She would talk about roastin'ears, and me being the city kid, I had no idea what she was talking about. I haven't heard them called roastin' ears since I was in college Dennis. I suppose you know what HogMal is too.

It is stuffed pig's stomach. The stuffing usually a bread and sausage-the stomach is stuffed and then roasted.

I'm not particularly fond of it--but I did taste it when I went to her house, back in college. It was interesting!!!

I use our rice steamer. Lots of butter and garlic in the water. Comes out most excellent.
