| | A Surprisingly Good Soup Recipe | | Yesterday, I was heading for the farmer's market; so I looked up squash recipes for ideas. I found this one for winter squash chowder. It looked good so I grabbed the ingredients. Winter Squash Chowder Recipe: Recipes: Food Network
I made a double batch, and fully expected to have lots of leftovers. Squash and pumpkin soup seemed a bit radical for my crew. I expected it to be ok. But, wow. This stuff is GOOD. None left
I did use the brown sugar in it, but did not use the acorn squash for the bowl. I used boxed chicken broth for the stock. It was creamy, sweet and savory at the same time. It's a bit of work to make cause I'm not a pro at cutting squash and pumpkin. But, oh was it worth it.

He only gets it at his mother's, though, since whenever I asked her for the recipe she's come up with some reason why she couldn't give it to me just then. (as in "when I'm cold and dead in the grave and will finally let you cook for my son",  )

| | Re A Surprisingly Good Soup Recipe | | BTW - looking at the recipe, if anyone is interested in reducing the calories (although not making it low cal) you could probably use milk instead of cream and puree some of the potatoes once they're cooked soft. Potato starch is an excellent thickener for soups and chowders, and pureed potato is a good trick for increasing richness and thickness as a replacement for cream.
I don't think the cream adds that much flavor, as opposed to the bacon. IMHO |

Me too!
And I am so eager to try this soup - and yes, by pureeing the potatoes. I stopped using cream in my cream soups, and all of my friends still rave about how good 'real cream' tastes in soup.  |

She says (in a different post) that you can use paprika or ground red pepper in place of the berbere, since most folks aren't going to have that on hand.
