Orange Chicken with Potatoes | | Got this out of Real Simple magazine and decided to try it. Very easy, very yum.
Orange Chicken With Potatoes
8 skinless chicken thighs (I use a mix of 4 thighs and 4 breasts, boneless and skinless)
2 onions, peeled and quartered
1 pound small red potatoes
1 small butternut squash, peeled, seeded, diced into chunks
12 cloves garlic, peeled
1 medium orange, cut into 1 inch rings, rind on
2 cups low sodium chicken broth
1 tablespoon honey
8 sprigs thyme
Kosher salt
Coarse ground pepper
Toss in crock pot. Cook about 4 hours. Serve over rice or with green beans on the side and crusty bread.
