For meals you make that are 30 minutes plus prep time. I'll start with tonight's dinner.
Vegetables With Hamouli Cheese
Thinly slice baby eggplant, yellow squash, vidalia onion and tomato. Layer in casserole dish with a dab of olive oil, kosher salt, ground pepper and thin sliced hamouli cheese until full. Bake at 350 for 30 minutes.
Wild Rice (make your own or use Carolina brand or Uncle Ben's), cook for 30 minutes.
Chicken breasts - poach in olive oil, lemon, garlic and pepper on medium to medium low for 30 minutes.
Wine. Open. (Tonight's wine is J. Lohr Paso Robles California Merlot, $16/bottle on sale at Market Basket)
Enjoy! Crusty bread optional, but we find that is plenty of food for two, and easy to expand for more people if company comes. |
