| | We've grilled every chance we could since I bought my grill. I am going to run out of ideas to make soon. So what are you all grilling?
Today it was chicken marinated with Emeril's Rosemary, Lemon and Gaaaaarlic marinade. The other day it was shish kebobs. Before that it was cheese burgers.
I am interested in making mexican grilled corn some time this week (providing there is corn on the cob available... I haven't seen it in the stores yet) and maybe experimenting with putting things IN the burger meat. I'm also looking forward to grilling some veggies that have been spritzed with balsamic and putting them on a toasted foccachia with some melted cheese.
So whatcha grillin? |

Seriously - while I love the GF grill, it's not the same as a real grill. We thought about getting the large patio model last year, but the results aren't appealing enough for us to spend the money. (Local fire codes prohibit people in my building from having charcoal or gas grills on their terraces.)

| | We made the best corn ever earlier this week.
We grilled some corn.
While the corn was grilling, we mixed a little melted butter, some mayo, and some lime juice in a bowl. In another bowl we mixed parmesean cheese, chili powder, paprika, and black pepper. When the corn was done on the grill, we slathered it with the mayo mixture (like you would with butter) and then coated the corn with a dusting of the dry ingredients. O.M.G. it was good.
Kevin is not a big fan of corn but he loved this.
Another thing we tried was to grill the veggies I had on hand. I tossed them with a little olive oil first. I mixed some mayo, lemon, and garlic together and coated some rolls with the mixture. When the veggies were ready, we layered them on the coated bread, and covered them with provolone cheese. We grilled the sandwiches until the cheese melted. These were also fantastic.
Now I'm searching the interent for more ideas. I'm trying to do low carb (which neither of these recipes were) but also trying not to make it boring.
Tonight is going to be beef kebabs. I don't really like beef, so I hope I can find a way to make them appealing. |

| | I'll be cooking for a crowd of old bachelor farmers all week - Ted, and his neighbors who show up at dinnertime when I'm visiting. The stove is ordered but won't be in until the 14th, so I am planning around a gas grill, microwave, toaster oven, rice cooker, and 2 burner camp stove. It's kind of fun, although I'll really enjoy the stove when it gets here.
Dinner tonight - he's taking me out. Tomorrow will be the catch of the day and I'm hoping that someone is jetty fishing today and will come back with a rock cod. I'll do a rice pilaf in the rice cooker and grilled vegies, probably using Margaret's recipe which sounds delicious.
