Any time you're on the west coast, you've got a bedroom here. Just found out a restaurant is closing in Coos Bay - it's been a money pit for years, and they just upgraded their bakery. They've got four - FOUR! - new midsize commercial Hobart mixers. I'd rather have a Hobart than anything else. My mom bought her Kitchen Aid when it was still made by Hobart. I bought mine after Hobart sold the line. Hers is a workhorse - mine does the job, but it's not a Hobart.

I think Hobart is still the industry's best, but since they lost their patent other companies are now making planetary mixers just as well built using Hobart's original design with minor changes. Looking at that I went with Univex because of the money difference at the dealer end. Univex was willing to bargain and I think it will last for my application longer than I need it to.

I know I'm drooling over the Univex. Attachment envy, I think.

I called Ted last night, told him that I'd bought 2 lbs. of Red Star yeast and would pick up 50 lb. sacks of bread flour and sugar on the way down Thursday night. The range is installed now, so I know what I'll do this weekend.

I am in heaven. And on vacation from my Atkins diet for the next week at least. The range is installed and I made hamburger buns and JP's bread recipe this weekend. It was so much fun. The rest of the cabinetry should be in sometime this month.

JP, what kind of dutch oven do you use? The one I used is in the range picture (on the floor to the left) but the crust was way thicker than I'd hoped it would be. Wonderful caramelized brown finish, but definitely chewy. The inside though - excellent. I baked it to exactly 210 degrees, following the CI recipe.
