| | Hey, I need breakfast ideas for something quick, portable and like the fast food joints that you can pick up, eat, transport, tastes good but isn't horrible for you.
Any ideas?
We do have microwaves at work and I have looked at some of the breakfast bowls or sandwiches in the freezer section at work, but those are terribly high in fat, cholesterol and especially sodium.
I have limited time at night to prep things, so I am hoping for things you might do on the weekend and freeze yourself and grab and go.
Any tips, suggestions, recipes greatly appreciated!

1/2 c. low-fat refried beans
2 slices Mexican chicken lunch meat (can substitute ham)
few slices green pepper
1/4 c. grated cheese
salsa or taco sauce
Layer beans, then meat cut into thin strips, green pepper and cheese on a tortilla. Drizzle salsa in a line. Roll, wrap in foil and freeze. |

Blueberry pancakes freeze really well. Heat, spread with cream cheese and there you go.  |

I'll use left over egg casserole or scrambled eggs (keep in a tupperware container) in a tortilla for a quick breakfast on the go - just wrap, pop in the microwave for 30 seconds or so, and you're ready to go.

I tend to eat lunch foods for breakfast. Less so since Kevin is here, but I still give into those cravings. This morning was flax seed tortilla, tomato sauce, and cheddar. Shrug. Could not have been too bad, because Kevin wanted it too. |

| | We used to pack bagels made up like egg McMuffins, wrapped in foil, for breakfast, on car trips, to avoid the fast food breakfast sandwiches. If you make them before leaving, they stay hot for a while. They re-heat well if cold. You could freeze them, I suppose. I didn't butter the bagels, I used lean Black Forest ham, a thin slice of low-fat cheddar cheese, and blotted all the grease off the "stepped on" fried eggs. Probably half a one of these would be enough, calorie-wise.
