Baked Apples, Banana Cake And Poppyseed Cake

I'm going to do this all in one-
Does anyone have a good tried and true recipe for Baked Apples? I have a ton of apples, I figured I'd do something different with them. I've read a couple recipes online but would love a tried and true one.

Does anyone have a recipe for Banana Cake? Not Bread-cake. I used to have one, but lost it moving somewhere.

How about a recipe for Poppyseed cake? not with lemon or orange or any Zest-just poppyseed cake! When we lived in Peru, we used to buy the most incredible Poppyseed cake. I'd love to try to make it myself but everything I've found so far is the Lemon/Orange zested stuff. Which I do like, but I prefer without the lemon or orange.

Here's a really good recipe for baked apples. I made it all the time before my son decided that he didn't like nuts or raisins.


Filling:
  • 1/4 cup toasted pecan bits (I bake pecan halves at 350 for 5-10 minutes, then chop them)
  • 1/2 cup butter
  • 1/2 cup packed dark brown sugar
  • 2 tbsp. chopped dried apricots or dried cranberries
  • 2 tbsp. raisins
  • 1/2 tsp cinnamon
  • pinch of cloves, pinch of nutmeg
  • 1/4 tsp. allspice

You will also need 6 baking apples and 1.5 cups apple juice. I used gravenstein, since that's what on our tree, but any firm apple will do.

Preheat the oven to 400. In a small bowl, mix butter and sugar thoroughly. Stir in dried fruit and spices. Set aside.

Cut a thin slice off the bottom of each apple so it will stand up without tipping. Core the apple without piercing the bottom . . . . I use a sharp knife and an ice tea spoon.

Stuff the filling into each apple, leveling off at the top. Cover just the filling with a piece of aluminum foil. Place the apples in a baking dish just large enough to hold the apples. Pour apple juice into the baking dish. Bake until the apples are tender, about an hour. I baste the apples with the cider occasionally.

As soon as the apples are done, transfer them to a baking dish. Serve at once.
