Here's a really good recipe for baked apples. I made it all the time before my son decided that he didn't like nuts or raisins.
Filling:
- 1/4 cup toasted pecan bits (I bake pecan halves at 350 for 5-10 minutes, then chop them)
- 1/2 cup butter
- 1/2 cup packed dark brown sugar
- 2 tbsp. chopped dried apricots or dried cranberries
- 2 tbsp. raisins
- 1/2 tsp cinnamon
- pinch of cloves, pinch of nutmeg
- 1/4 tsp. allspice
You will also need 6 baking apples and 1.5 cups apple juice. I used gravenstein, since that's what on our tree, but any firm apple will do.
Preheat the oven to 400. In a small bowl, mix butter and sugar thoroughly. Stir in dried fruit and spices. Set aside.
Cut a thin slice off the bottom of each apple so it will stand up without tipping. Core the apple
without piercing the bottom . . . . I use a sharp knife and an ice tea spoon.
Stuff the filling into each apple, leveling off at the top. Cover just the filling with a piece of aluminum foil. Place the apples in a baking dish just large enough to hold the apples. Pour apple juice into the baking dish. Bake until the apples are tender, about an hour. I baste the apples with the cider occasionally.
As soon as the apples are done, transfer them to a baking dish. Serve at once.
