Tomorrow is #1's graduation party. Amongst other things, our menu includes BBQ ribs. Helen kindly made the enourmous batch of Slick's sauce,  I have all the stuff for ribs, the peaches are sliced to make cobbler tomorrow morning, and all is going as planned. Um, well, it was, anyway.
I found mesquite chips, and was delighted. I soaked them for an hour, used a dry rub on the ribs, and #1 put them into the grill on the very lowest heat. After about ten minutes on either side, we turned off the gas and closed up the lid so that the ribs could just sit in the mesquite smoke for a little while.
#2 and I went to Dogmart to buy more kitten milk for Poe. We looked at the cockatiels, made a tag for King Kong's collar, and generally had a great time together. We stopped to get a Coke on the way home.
On the way back, there is an overpass which makes a hill. It is the point at which you can first see downtown. As we came over the hill, #2 and I both remarked on the terrible fire somewhere, we could see this massive plume of smoke.
We drove down the hill, and we both agreed that the fire wasn't too far away from our neighbourhood. We turned onto our street, and decided that this fire was awfully close to our block. I worried about the neighbours, because someone has been setting fires in our alley.
As we pulled up in front of the house, we could see the fire. That's because the fire was coming out of our barbecue. #1 had turned off the gas, but the wood chips had caught fire, which had burned hot enough to set the ribs on fire. Several neighbours had knocked to tell #1 that there was a lot of smoke coming from the back yard, and he politely told them that I was smoking ribs. He was right, the ribs did get smoked. The fire was so intense that the bone disintegrated when we finally got the fire out and tried to move the ribs, or what used to be ribs. I used the hose to put out the fire, laughing so hard I could hardly stand.
I don't know what to do next. This could be a teachable moment - 'see how hot a fire has to be to burn bone, children?' - or maybe I need an intervention: "Hi, my name is Cindy, and I'm an idiot."
At any rate, tomorrow's menu has been changed due to circumstances beyond our control. |

| | Re "Cloud of smoke, pillar of fire" | | OMG, guys, I have no idea! I was going to make brisket originally, but when I went to buy one, the cheapest one was $85, so I abandoned that idea! Then, the ribs seemed a good idea. Now, I'm not even sure if my barbecue grill still works - I really drenched it.
So far, I have some really yummy-smelling pulled pork, and some coleslaw. I have peaches ready to be tossed into the cobbler crust, and strawberries for shortcake. I am thinking that just adding margaritas to that might be festive, but kind of short on food. Give me ideas? |

I hope Slick isn't reading this  but I don't cook my baby backs on the grill for the same reason that you just lived through. I dry rub them, wrap in foil and bake for 2 hours at 300. Then, I unwrap them, put them on racks on a cookie sheet in my oven, and baste them with sauce. I cook them another hour or two at 350, basting with sauce every 15 minutes. Take them out, cut them up, and serve. I suppose they could be finished on the grill but there have been no complaints. Or leftovers.

I have the pulled pork for sandwiches, but I have a crowd coming so I still need another main meat dish. I think I will get up early and go to the butcher's to get more ribs! And honestly, I've never done the smoking on the grill thing- I alwys made them in the oven, too. It's just that I found the mesquite and had already found the recipe/technique for smoking them first then finishing in the oven, and I wanted to make them taste more like the barbecue we had down south. Oh well, live and learn.  |
