IT'S SQUASH TIME!!!
And I don't mean squash as in "squash a bug" or squash as in the game.
It's time for all those yummy squash veggies to be harvested and devoured in manners of all sorts. I've gotten somewhat addicted to spaghetti squash with a little sauce and parm cheese. Less carbs and calories than pasta, and boy, does it fill you up!!! Spaghetti squash is a mother to try to cut open, but once you do....
I know there's a fabulous squash soup in one of the forums (search for the recipe if you would like to try it)....let's share some of our favorite ways to enjoy squash today!!!

| | Re:(1)Fall Delights...H&F 10/5 | | We had butternut squash last night. cut it open, scoop out the seeds, the sprinkle brown sugar in the bottom of a baking dish, lay pats of butter on top of that, prick the inner surface of the squash and lay it down on the sugar and butter. Bake until soft. Pretty good, and I don't even like squash!
Of course, my favorite squash is pumpkin pie with a big dollop of Cool Whip on top, but that's not helping, is it....

I'm not a huge fan of butternut squash - I want to like it, but it's just too strong of a flavor for me, I guess. Or maybe it's acorn squash that's too strong.
We used to bake the seeds from our pumpkins and eat them as treats. I should try doing that this year too. I would have to imagine they are not too horrible for you!

Money got tight suddenly, and since there is no refund on our deposit we're planning to go. Wish us luck eeking out the cost of gas, food and propane! It should be fun regardless. I was away this weekend and had the very best squash soup. Must get the recipe!!! Yum!!!
Didn't have dinner last night when I got back home, and have a killer headache today. Took some aspirin, but I'm very tired (happy and relaxed, but tired) so I can't kill the headache.
Had an egg sandwich for breakfast to get some protein, and will probably have a salad for lunch. |
