| | Spaghetti squash is one of those things I usually eat once a year and can't decide if I like it or not. Being that its Passover, I thought it would be a good meal, so I bought one, but I just didn't think Brian would like it. So, last night I had a manicure and didn't get home till 8. Brian was going to make dinner so I suggested that he make the squash. I told him how to cook and shred it, and then that we'd eat it with tomato sauce and cheese. Still didn't think he'd like it though. So I suggested that it might be better if he sauted some onion and mushrooms then mix in the squash and use a lot of sauce. He did. Sauted onion and portobello mushroom, an entire jar of garlic and sweet pepper tomato sauce (yes, we use jarred - so sue us) and the cheese.
When I walked in, the house smelled SOOOO good, and he was looking happy. This was so so yummy! We both loved it! The only really fattening part was the cheese and he didn't use that much. And with enough sauce you don't even really know what it is, so you can sneak it by people like Jer and Dan.
We'll be eating a LOT of this. Great healthy dinner and REALLY yummy! |

Since Birdie made the kitchen table her home, we've hardly ever actually sat at the table for a meal. Who wants to eat that close to a litter box. And if I move the litter box, I certainly don't want to eat next to poop on the floor.  |

| | I love squash but not spaghetti squash. Probably just haven't had it prepared yummy. That does sound good.
We used to eat on TV trays...then the children came along.

| | Yep, I didn't really love spaghetti squash, but I thought if I really drowned it in sauce it would be good. Then I though to cook it in the sauce. You may want to try it Margo! It really was amazing - and you can add whatever veggies you want. You could even add chopped beef or chicken or whatever would go with a spaghetti like meal. |

So, you cooked in the oven first and then cooked it in the sauce? It does sound really good...I haven't had it since last fall!

| | Technically, I didn't do anything but eat it, but yes. Brian cooked the squash in the oven - then sauted onion and mushrooms on the stove, added the squash, sauce and cheese. I have the leftovers for lunch! YUMMY. (and with the mushrooms and all the sauce - used a chunky veggie spaghetti sauce - you can't even see the squash so I'm thinking you can sneak it past Dan) |

| | Our dining room gets so hot during the summer that we gave up on eating in there a long time ago. The table now houses one of the computers and various assorted stuff.

| | Interesting - we boil our spaghetti squash (face up, cut in half) and then shred it. We then eat it like any pasta (though note, it doesn't make for a great squasharoni and cheese). |
