I finally guessed one right and I STILL can't beat Sylvanb.
And, now I'm hungry for a spicy cajun stew, though I'm not sure I want to wrestle a 60 pound crawfish to make it.

I just looked up gaspergou -- it's a kind of freshwater Drum, a fin fish capable of making loud underwater drumming noises and member of a family including both salt- and fresh-water Drums. Size seems about right, but 'tain't no shellfish. Seems to inhabit our (US) southern rivers.
