Kugel!
Kugels are made from all sorts of things, and are usually served as a side dish. Some are more desserty and I have a dairy kugel recipe which can be the main dish for a light lunch. I want Delia's carrot kugel recipe, so I'm going to post my fave kugels in hopes of getting her to trade.

potato kugel

6 large unpeeled potatoes, preferably russets
2 peeled onions
2 carrots
8 eggs
1/2 cup matzo meal
1/2 cup oil plus 2 tablespoons
1 1/2 tsp. salt
1/2 tsp pepper

Grate all vegetables into a large bowl. I grate by hand after having had an unpleasant experience with a food processor, but it would be much easier if your processor works well.

Preheat oven to 400 F. Pour 2 tablespoons of oil into a 9x13 pan and preheat the pan along with the oven.

Meanwhile, mix the grated veggies with the oil, matzo meal, eggs and salt and pepper. Pour the batter into the pan of preheated oil, turn down the heat to 350 and bake for 45 minutes. If the kugel isn't nicely browned on top, bake another 15 minutes. Serve warm or room temperature, but do not refrigerate before serving. It doesn't reheat as well as it might.

Noodle vegetable kugel

1 lb. fettucine or other broad noodles, boiled til just tender
1 large onion, chopped
1 cup sliced mushrooms
2 stalks sliced celery
1 cup chopped zucchini or broccoli or asparagus
1 carrot, sliced
1/2 small cabbage, sliced thinly
1 tbs. olive oil
5 eggs
1/3 cup oil
1/2 cup strong vegetable broth
salt and pepper to taste


Saute onion till soft, add the rest of the veggies and saute one minute. Mix oil and eggs into drained noodles, add veggies, add salt and pepper to taste.

Bake in 9x13 pan for 45 minutes, serve warm.

The carrot kugel is not my recipe. It belongs to a friend of TheEye's, but it's yummy!

Note: You must back it in a tube pan or the center won't cook properly.


Carrot Kugel

2 c. flour
1 c. sugar
2 t. baking powder
2 t. baking soda
1 t. salt
1 t. cinnamon
2 eggs
½ c. oil
1 T. lemon juice
2 t. vanilla
2 pounds carrots

1. Mix all ingredients except carrots until well blended.
2. Grate carrots in food processor until finely chopped.
3. Mix carrots into batter.
4. Bake in tube pan lined with parchment paper* at 350 for about an hour.

Dairy noodle kugel (sweet kugel)

1 lb. egg noodles, boiled and drained
2 cups cottage cheese
2 cups sour cream
6 eggs
1 cup sugar
1 tbs. vanilla
1 can crushed pineapple, drained
1 cup crushed corn flakes
1 tsp. cinnamon
1/4 cup brown sugar
1/2 stick butter

Mix eggs, sour cream, cottage cheese and vanilla. Add noodles and pineapple, and pour into lightly oiled 9x13 pan. Mix crushed cornflakes, cinnamon and sugar, and sprinkle on top of noodle mixture. Dot top with chopped butter. Bake at 350 for 45 minutes to an hour.

MJ, what is noodle casserole? (and bear in mind that I have never been a fan of cooking with a can of cream of anything soup- but after moving here, I am downright traumatized by the thought! Eek)

well, in general casseroles have some sort of short pasta, and some vegetables, and egg or something to keep it all together, maybe cheese, maybe meat or tuna, mixed together and put in a dish and baked... my mac n cheese is a casserole, your noodle kugel recipe looks like a typcial casserole recipe, so I'm trying to figure out the difference.

Cranberry kugel (served as a dessert, it came from my friend Wendy and it is SO yummy and easy!)

2 cups oatmeal
2 cups flour
1 1/3 cups brown sugar
2/3 cups oil
2 tbs. cinnamon
2 cans cranberry sauce (jelly or whole-berry)
2 cups applesauce
1 can pineapple tidbits, drained
1 small can mandarin oranges, drained

Mix oatmeal, flour, cinnamon and sugar. Mix in oil till crumbly. Pat half of mixture into 9x13 pan.

Mix cranberries, applesauce, oranges and pineapple. Spread this mixture over crumb mixture, sprinkle crumbs on top. Bake at 350 till slightly browned, about 45 minutes. Serve warm, room temp. or cold. Warm with a scoop of vanilla ice cream is just pure evil!
Oh! Well, noodle kugel is crispy on the outside and a little soft on the inside. I think of mac and cheese as much creamier.

The veggie noodle kugel gets crispy outside and is a lot firmer than tuna noodles or mac and cheese. The sweet noodle kugel is very tender and puffy, a cross between a souffle and a creamy pudding.

I would rather die than eat that! I have seen these things being offered as samples at Sam's Club, and I wanted to flee. And french-fried onions are of the debil!

I just made scallopped potatoes for my Mom, and sister and brother-in-law, and believe me it would not have been improved with either fried onions OR mushroom soup. A plain old white sauce was fine. Liz wanted "au gratin" so I sprinkled cheddar cheese over the top. Scallopped potatoes are a perfectly fine offering for a covered dish (pot luck) supper, and are not a casserole.

For those of you enamored of casseroles, might I offer Five Can Casserole (an authentic '70s recipe, or more probably a hold over from the 50's.

CINDY DO NOT READ THIS!

Five Can Casserole
One can cream of mushroom soup
One can fried onions
One canned whole chicken (pick the meat off the bones)
One can of green beans
One can of Chinese fried noodles

Mix all ingredients except the fried onions together in a greased casserole dish. Top with fried onions. Bake at 350 until hot.

Marty and I were serve this by a real Southern Presbyterian church lady. Take your blood pressure after eating, because the sodium in this recipe is through the roof.

Sorry, Margo. I don't consider mushroom soup a vegetable either. Since nearly the whole family should limit their dairy intake, I have spent years learning to make things without cream soups in the recipe. That's why plain old scalloped potatoes are a big treat.

When you're up to your ass in alligators, it's hard to remember that your original intention was to drain the swamp.
