Tomorrow, some friends are coming over for lunch and a tour of my gardens. Somehow, scheduling something like this always makes my gardens look their very worst- things get overgrown, weeds appear minutes after I've weeded, etc. However, this year I promised myself I would let people come over anyway even if the gardens aren't up to my standards, and I'm glad. I'm really excited!
I have been out working in the garden since 6:30, and this afternoon I am going to start cooking. I just can't decide what to serve. It's supposed to be really hot, in the mid 90's, so I'm thinking light stuff. Any good lunch ideas? |

Tuna salad. The kind with little bitty pasta, peas, onions, hard boiled eggs and some good seasoning. (I like tarragon and parsley, myself)
Canteloupe, cut up in chunks.
Tea, or that white grape/mint drink my mom makes (I can get the recipe, or maybe my sister has it...very good, very refreshing)
Some nice fresh bread, cut in chunks with some lovely dill garlic butter or something equally as yummy.
If I leave now, I can be there by midnight....

This sounds like it:
1 48-oz. bottle Welch's White Grape Juice, chilled
1 quart ginger ale, chilled
Crushed fresh mint leaves
Mom puts the grape juice and mint leaves together in a pitcher ahead of time and then mixes 1:1 with the ginger ale when she's ready to serve. Serve in tall glasses over lots of ice. Very refreshing.

Not cantaloupe - honey dew.
Cut it into chunks - mix in a tablespoon of lime juice and a teaspoon of sugar. Mix up well, add pieces of mint leaves - refreshing - like a mojito! |

Yum, pasta salad with tuna. Some sort of small pasta, tuna, peas, I use romaine lettuce too, various veggies and olives, and I use Caeser dressing. Cherry tomatoes to garnish, lots of fresh parsley - it's really yummy.
And I am so hungry - I finally realized it would be a good time for lunch, but it's after 6. Where did my day go?! | |
