| | 5 MINUTE CHOCOLATE MUG CAKE | | I haven't tried this personally, but some of my friends have and they say it works great:
5 MINUTE CHOCOLATE MUG CAKE
1 coffee mug
4 tablespoons flour (that's plain flour, not self-rising flour)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Some nuts (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix
Thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes on high. The cake
Will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to share!)
And why is this the most dangerous cake recipe in the world? Because
now we are all only 5 minutes away from chocolate cake at any time of
the day or night!

Cake flour is finer than regular flour, so you can't sub it 1:1. You have to subtract some of the plain flour and sift it to make it fine.
Two subs: Quote:

* 1 c cake flour = 12-14 tb plain flour + 4-2 tb cornstarch or other low gluten starch] OR
* 1 c cake flour = 7/8 c plain flour.
| But since this is only 4T, adjust accordingly.

It actually didn’t turn out too bad! I should have added 1 tsp. Vanilla though. It wasn’t as chocolaty as the normal cake I bake, but it was pretty good! The texture was actually cake like -not like a brownie at all. very soft when you pressed on it. It needed an Icing though…

If you eliminate the egg, I would expect the cake to be more dense. Unless you sneak some sort of leavening agent in there.
OTOH, a dense cake might be enjoyable, more brownie-like. Probably good with ice cream.
