I'm glad that the new chef is working out. I've worked in enough kitchens to know-if the head cook can't hack it, the whole kitchen suffers.
My favorite chef was a guy who had been born in Hungery, then moved to Canada, then to the US-he was a colorful energetic 70 year old man who made the best damned Mexican food you ever tasted.
My least favorite was the guy who took a coffee pot out of my hands and threw it against the wall because he was angry about something. He ended up at the Ihop.
