Salsa and Chips
I had to have a little snack tonight, and I really didn't want to eat something too high in pts. so I got a little creative.
I wanted nacho chips, but, all we have is the full fat kind in the house. I knew I couldn't eat just a couple, so I decided NOT to open that bag.
Instead, I took a flour tortilla (but this would work with any type of tortilla, I bet, esp corn), poked it with a fork several times, sprayed it with Pam on both sides, and sprinkled a bit of salt on one side.
I threw it onto a medium heat frying pan until each side was golden.
Then, I took about 3-4 table spoons of salsa, and 1 wedge of laughing cow, threw it all into a bowl and nuked it. I kept stirring it after ever 15 seconds or so, and I think it took about 45 second to completely melt.
This was sooooo good. It came to 2 pts total, but, it would depend on how many pts were in the tortilla and the salsa (if there was any in the salsa).
The one tortilla and the amt of salsa/cheese mix was perfect for a snack. And it was guilt free! :clap:
Hey, I'm easily pleased. Give me something easy to make, tell me it's low points, and make it taste good and I am thrilled!

Sounds pretty good!
There shouldn't be any points in your salsa, but a 6" flour tortilla will cost you 2 points.
It's still a better choice than tortilla chips, at 3 points for a measly 12 chips.
But a 6" CORN tortilla is only 1 point - so that's even better yet!!!
(Corn or bean salsa has points, but I'm assuming you are talking about your garden-variety Pace-type salsa)

Salsa and Chips
Our local Kroger makes fresh tortillas, and we frequently pick up spinach and fresh pico de gallo and cheese.
Oh, and refried beans, too, but that's for protein. We try to get the fat-free stuff and mix it with Ro-Tel, but...
